Vinification
Selection of Malagouzia grapes from mountainous regions of Macedonia in Florina and Pieria. A combination of berry testing and analytical data to determine the time of harvest in each vineyard. Harvested at the lowest possible temperatures of the day. Strict manual sorting during receipt. Standard white vinification with cold maceration. Alcoholic fermentation at controlled temperatures using selected yeast strains. Maturation of the wine in the tank by stirring the fine lees after the end of fermentation until bottling.
