Vinification
Selection of Assyrtiko grapes from mountainous regions of Macedonia in Florina and Pieria with particularly low yields. A combination of berry testing and analytical data to determine the time of harvest in each vineyard. Harvested at the lowest possible temperatures of the day. Strict manual sorting during receipt. Alcoholic fermentation at controlled temperatures using selected yeast strains. Aging of the wine in the tank by stirring the fine lees after the end of fermentation until bottling.
