Taste Profile

Deep red colour with an intense personality. It produces a rich bouquet of ripe red fruit, blackberry and plum, together with sun-dried tomato and the aromas derived from ageing, cinnamon and wood. A rich body, good balance and structure, soft tannins in its finish.

Vinification

Cold maceration for 24 hours, small percentage bleeding for rosé, controlled alcoholic fermentation with selected yeast strains at 19-23C, gentle extraction with few pumpovers before starting fermentation (7-10 days), no pressings included in the blend at all, malolactic fermentation, French oak barrels for 12 months, mild filtering with large cross section diatomaceous earth, final filtering (polishing) with sheet filtration.
