Vinification
The grapes are picked by hand and then cooled. After crushing is carried out, the grapes are pressed under mild pressure in the membrane press. The free juice is collected at a very low temperature to obtain high purity juice without the use of filtration aids. Alcoholic fermentation takes place with selected yeast strains at a maximum temperature of 18C.
