Vinification

Cold soak for 24 hours, “bleeding out” of rose depending on year, controlled alcoholic fermentation with selected yeast strain at 20-27C, soft maceration with intense turnovers before onset of fermentation, malolactic fermentation, gentle filtering and bottling.
