Vinification

The grapes are delivered to the winery and cooled to 10°C.

Hand sorting follows, then destemming and transfer of the must to the press, where it remains for 24 hours.
The free-run juice is then transferred to stainless steel tanks, where it undergoes clarification through cooling.

Alcoholic fermentation takes place at controlled temperatures between 14–18°C to preserve primary and secondary aromas.
After fermentation, the wine is racked into stainless steel tanks, where it matures on its fine lees, with regular stirring, until bottling.
