Selected Moschofilero grapes from our vineyard in Mantineia were harvested at early maturity in mid-September. After gentle pressing of the grapes, the juice was fermented at a low temperature while afterwards the base wine was matured on its fine lees for 6 months. Then we implemented the traditional method for sparkling wine production with secondary fermentation in the bottle. Disgorged on November 2023 after a beneficial stay of 18 months on its lees.
