Selection of completely intact bunches from estate-grown 50 year old vines. (single vineyard). Hand picking on the coolest times of the day. Precise berry selection in the winery. Vinification in the absence of sulphites with minimum interventions. Fermentation followed by 3 month maturation in French oak barrels.Gross filtration and bottling.
