Rich, deep ruby color with blue expressive highlights. Its aroma combines blackcurrant, raspberry, blackberry, plum and spices. Vinification
The vinification of the 2 varieties is done separately in stainless steel tanks by performing cold maceration for 24-48 hours before fermentation begins. Fermentation is controlled at constant relatively low temperature and lasts 10-12 days. Gentle extraction and cap management takes place, followed by malolactic fermentation. The wines mature on the fine lees to acquire the rich structure up until bottling.
