Vinification
Classic red wine vinification. The varieties are vinified separately. Short-time cold maceration is performed to create a more intense aromatic potential. Alcoholic fermentation takes place in stainless steel tanks at a temperature of 18-28 ° C and the juice remains in contact with the skins for 6-7 days until the desired color and the desired concentration of tannins are obtained. After the complete fermentation of sugars follows the malolactic fermentation which is desirable to reduce the acidity and improve the taste of new wines. Wines mature for 12 months in oak barrels of French origin while merlot and syrah mature in American-oak barrels for 12 months. Wines are blended after they are taken out of barrels and finally mature for an additional 24 months before being released for consumption
