Vinification
The grapes were selected from a vineyard in the Marina at a very ripe stage. Τα σταφύλια επιλέχτηκαν από αμπελώνα στη Μαρίνα. Marina was chosen to be able to give this freshness to the wine due to its higher altitude. At no stage of vinification was SO2 added and macro-oxygenation was applied. Maceration lasted 11 days with gentle pump-overs at a temperature of 18-23C while at the end there was malolactic fermentation to soften the wine even further. The wine was left for racking, filtered and bottled.
